If like most of us, you are planning on eating a little healthier this year, why not try our Detox Salad? An exotic mix of flavours to liven up your diet and add a bit of colour in a salad. If you’re wondering what kohlrabi is, it’s name actually translates as ‘turnip cabbage’. Crowned as a trendy superfood of 2017, kohlrabi boasts a range of health benefits such as fibre, vitamin C and B6, and potassium. As well as leaves loaded with iron and being only 36 for a cup (raw). The raw taste can be compared to a slightly spicier brocolli stem, but when cooked, the taste is much sweeter. In season in autumn and winter, you will find white, pale green and purple bulbs on offer.
This salad will be great to get you started as it includes a lot of antioxidants, vitamins, and cleansing vegetables, that you need to cure your hangover from NYE. With a shaved butternut squash and pomegranate reduction, wild leaves and Mandarin, this kohlrabi salad will awaken your taste buds and make healthy eating tasty!
- 1 home kohlrabi head peeled and diced
- 1 Mandarin hild and segmented
- 1 top end of butternut peeled and grated
- One bag of mixed rocket leaves
- Some picked wild leaves such as dandelions
- One bottle of pomegranate juice
- 100g of white wine vinegar
- One teaspoon of sugar
To make the syrup place the sugar vinegar and pomegranate juice in one pot. Bring to the boil until reduced by half. If you would like it as thick and sweet as syrup, add more sugar and reduce until the desired consistency is attained.
Finally, mix all the ingredients together and dress with the pomegranate reduction.
