Chocolate Mousse Ingredients

(Makes 30)

  • 1.5kg chocolate
  • 24 egg yolks (360g)
  • 8 eggs
  • 2l whipping cream
  • 800g sugar
  • 200g water



  1. Bring the sugar and water to the boil
  2. Pour the boiled sugar over the eggs and yolks and whisk until quadrupled
  3. Whisk cream until stiff
  4. Melt the chocolate
  5. Combine the chocolate and cream
  6. Fold in the egg mix
  7. Leave to set
