lincoln cathedral catering

I had that the pleasure of meeting Liz Parkin from the Orders of St John Care Trust, regarding the annual awards ceremony. The event required two different types of catering; the first being a buffet lunch with tea, coffee and drinks throughout the day for 100 people. This was relatively simple with just good wholesome tasty food. Then of course, their actual Awards dinner to be held at the Chapter House in Lincoln Cathedral for 100 guests. Initially the menu started out as a 2 course meal for lunch but then evolved into a three course meal with wine and the works for a truly spectacular event.

The buffet lunch the day before works very well as they are a stones throw away from our premises. Read on to find out about the menu!…

The Awards dinner was due to start at 11 a.m. and with restrictions from the Cathedral, we could not arrive until 8:30 on the morning. With military precision and operation, we managed to get the room set and organised for 10 a.m. (see photos above). With prior knowledge to working with the venue we know what to expect and also how best to achieve people’s goals and expectations.

Drinks were served from 11 a.m. with champagne and mocktails for the drivers. Followed by the awards dinner. The starter was a twist on a recent dish that we had done; it was all terminal salad with crispy Parma ham and Lincolnshire Poacher cheese mousse served with delicious slow cooked beetroot rocket, pickled cauliflower and black olives oil. Then on to the main course, the other classic and substantial Lincolnshire shin of beef with thyme truffle, served with potato green beans spinach and roasted shallots – the ever faithful and classic that never fails to impress and fill the belly. Then onto dessert, a chocolate brownie with salted orange caramel and passion fruit mousse with passion fruit seeds. This complimented the rich beef dish perfectly with the sharpness, along with the smooth dark chocolate.

Once the meal was done a rather post-haste clean down was done and we were offsite by 3:30p.m. All in all, it was a fantastic day filled with huge compliments and I thoroughly enjoyed the event, alongside the Salted Orange Team.
